AVIYAL - Mixed Vegetable Curry of Kerala.

Aviyal Koot or curry is famous for its special flavors; it is one of the favorite dishes of almost all keralites. Especially on Onam (Kerala's national festival-the Harvest Festival) season, aviyal is one of the major dishes in lunch and dinner. This unique dish is an essential part of any Kerala function-wedding feast (Sadhya).

In Malayalam 'Aviyal' means mixer, literally it's a mixture of different vegetables added to slightly spiced grated coconut. A thick mixture of different vegetables added with curd and coconut seasoned with coconut oil. This can prepare in different flavor by adding either mango, tamarind or soured curd. Here is a recipe of this wonderful and delicious curry added with sour curd.

INGREDIENTS REQUIRED:

Mixed vegetables.

Drum Sticks 2

Banana-raw - 2

Carrots - 2

Tender Beans - 100 gms.

Snake guard - 250 gms

Yam- 250 gms.

Cluster Beans - 100 gms.

Ash guard 2 or 3 large pieces.

Green Chilly - 6

Coconut - 1

Sour Curd (plain yogurt) - 2 cup

Turmeric Powder - 1 ½ tsp.

Cumin Seed ½ teaspoon

Chilly Powder - ¾ tsp.

Curry Leaves two springs

Coconut Oil 2 tbsp.

Salt to taste.



METHOD

• Peel the skin of vegetables and wash well.

• Cut the vegetables into uniform sizes of one to one and half inches.

• Put the vegetables in to a bowl add water chilly powder turmeric powder and salt then cook till it become tender. Do not overcook, it should remain crisp.



• Grind the grated coconut with cumin seed, green chilly and one spring of curry leaves into a light paste without adding much water.

• Add this paste into the cooked vegetables; mix it with curd.



• Boil it for few more minutes then remove from fire. Add coconut oil and few curry leaves stir gently until coconut and oil reach everywhere. Stir without mashing the vegetables.

• Close the bowl and keep aside for some time and then serve.



NOTE:

This dish is generally used with rice, it can also be used with chappathi and puri.

पंजाबी समोसा - Punjabi Samosa

सामग्री : ५-६ लोगो के लिए
मैदा : ४०० ग्राम
रवा : ३० ग्राम
निम्बू : १/२
घी : ३० ग्राम
खानेवाला सोडा : १/४ छोटी चम्मच
नमक : स्वाद के अनुसार
थंडा पानी : जरूरत के हिसाब से

आलू का मिश्रण बनाने की सामग्री :
आलू : ३०० ग्राम
हरे मटर : २०० ग्राम (उबले हुए)
हरा धनिया : १२० ग्राम (बारीक़ कटा हुआ)
आम्चुर पाउडर : ५ ग्राम
चाट मसाला : १० ग्राम
हिंग : एक चुटकी
नामक : स्वाद के अनुसार
तेल : ३० एम्मेल

साबुत मसालों की सामग्री :
कश्मीरी सुखी लाल मिर्च : ६-७
साबुत जीरा : ५ ग्राम
साबुत धनिया : २-३ ग्राम
लौंग : ३
तेज पत्ते : ३

अन्य सामग्री :
तेल : तलने के लिए
खजूर इमली की चटनी : जरूरत के हिसाब से

बनाने की विधि :
1) मैदे को अच्छी तरह से साफ़ कीजिये और फिर उसमे रवा मिलाये.
2) घी को गरम कीजिये और मैदे के मिश्रण में डालिए.
3) अब बाकी की सामग्री को डालकर ठंडे पानी की मदद से पूरी जैसा आट्टा तैयार कीजिये.

साबुत मसालों को पीसने की विधी :
1) सभी साबुत मसालों को एक कडाई में बीना घी या तेल डाले अच्छी तरह से भूने. थंडा करिए.
2) अब मिक्सी की मदद से इन मसालों को अच्छी तरह से पीस दीजिये.

आलू के मिश्रण को बनाने की विधी :
1) आलू को उबालकर उसके उपरी छिलके को निकालकर अच्छी तरह से मसल लीजये.
2) अब एक कडाई में तेल गरम कीजिये. उसमे हिंग डाले
3) मसाले हुए आलू, उबले हुए हरे मटर, चाट मसाला, आम्चुर पाउडर, साबुत मसालों का पाउडर, हरा धनिया और स्वाद के अनुसार
नमक मिलाकर इस मिश्रण को धीमी आंच पर ५ मिनट के लिए पकाए. थंडा कीजिये.

पंजाबी समोसा को बनाने की विधी :
1) आपने जो मैदे का आट्टा तैयार किया हैं उसमे से छोटी पतली रोटिया बेलिये और उन्हें एक तवी पर कची - पकी पकाए.
याद रहे की रोटियों को पूरी तरह नहीं पकाना.
2) अब इन रोटियों को समोसा का आकार दीजिये और उनमे बनाया गया आलू का मिश्रण डाले. मैदे की पेस्ट की
मदद से किनारियों को अच्छी तरह से मिलाकर समोसे को बंद कीजिये.
( मैदे और पानी को मिलाकर एक हलकी गाड़ी पेस्ट तैयार कीजिये जो आपको समोसे को बंद करने में मदद करेगी)
3) अब एक कडाई में तेल गरम कीजिये.
4) बनाये गए कचे समोसे को इस गरम तेल में धीमी आंच पर तलिए .
5) गरमा गरम पंजाबी समोसा को खजूर ईमली की चटनी के साथ परोसे.

स्वीट पोटेटो करी - Sweet Potato Curry

सामग्री : २ लोगो के लिए
शकरकंद : १ बड़ा (उपरी छिलके को निकालकर छोटे एक समान टुकडो में कटा हुआ )
ताजे नारियल का दूध : ४२५ एम्मेल
प्याज : १ ( छोटे एक सामान टुकडो में कटा हुआ)
लाल मसाला : १५ ग्राम
नमक : स्वाद के असार
तेल : ३० एम्मेल

लाल मसाला बनाने की सामग्री :
काश्मीरी सुखी लाल मिर्च : ४-५ ( इन्हें गुनगुने पानी में १० मिनट तक भिगोये)
प्याज : लगभग १२० ग्राम ( बारीक कटा हुआ )
लहसुन : ४ कलियाँ ( बारीक कटी हुई )
अदरक : ५-७ ग्राम ( कदुकs किया हुआ )
धनिया पाउडर : ७ ग्राम
जीरा पाउडर : १५ ग्राम
सफ़ेद मिर्च पाउडर : ५ ग्राम
नमक : स्वाद के अनुसार

बनाने की विधि :
लाल मसाला बनाने की विधि :
1) लाल मसाला की सभी सामग्रियों को मिक्सी की मदद से पीस दीजिये.

अ स्वीट पोटेटो करी बनाने की विधि :
1) एक बड़ी कडाई में तेल गरम कीजिये. कटे हुए प्याज को इस गरम तेल में ३-४ मिनट तक पकाए.
2) अब लाल मसाला डालिए और उसे लगभग २-३ मिनट तक पकाए.
3) कटे हुए शकरकंद को डालकर लगभग ४-५ मिनट तक पकाए.
4) ताजे नारियल का दूध और स्वाद के अनुसार नमक मिलाकर धीमी आंच पर तब तक पकाए जब तक शकरकंद बराबर
पक न जाए.
5) लो हो गयी तैयार गरमा गरम "अ स्वीट पोटेटो करी" जिसे आप बासमति चावल के साथ परोस सकती हैं.

एक सुचना :
बची हुई लाल मसाला की पेस्ट को आप फ्रिज में थोड़े दिनों के लिए रख सकती है.

Bread Savouries - ब्रेड सय्वोरीस

सामग्री :

ब्रेड - ४ slice

प्याज - एक छोटा ( बारीक कटा हुआ)
टमाटर - एक बड़ा ( छोटा कटा हुआ)
गाजर - एक मीडियम (cubes में काट कर स्टीम करी हुई )
बीन्स - आधा कप ( cubes में काट कर स्टीम करी हुई)

मटर - आधा कप ( उबला हुआ)
नमक - स्वाद anusaar
काली मिर्च - १/४ चम्मच
तेल - १ चम्मच
बनाने की विधि:
सबसे पहले एक कडाही में आधा चम्मच तेल डालकर उसको धीमी आंच पर रखें.
अब उसमें आधा कटा प्याज डालें. और हल्का भूरा होने तक पकाएं.
अब उसमें गाजर, बीन्स और उबला हुआ मटर डालें और अच्छी तरह हिलाएं. कडाही को ढक दें और २ मिनट तक पकने दें.
इसमें टमाटर और बचा हुआ प्याज डालें और हिलाएं. (ध्यान रखें की हमें टमाटर और प्याज को पकाना नहीं है.)
अब स्वाद अनुसार नमक और काली मिर्च डाल कर आंच से उतार लें.
अब ब्रेड को लेकर उसके कोने काट लें और अलग कर दें. ब्रेड के पीस को हमें बेलन से इस तरह बेलना है जैसे चपाती बेलते हैं. ऐसा करने से ब्रेड पतली हो जायेगी.
अब ब्रेड के बीच में तयार की गई सब्जी डालें और ब्रेड को फोल्ड कर दें और पानी से उसके कोनो को सील कर दें . इस तरह सब ब्रेड पीस को तयार करें.
अब आप एक नॉन स्टिक पैन में आधा चम्मच तेल डालें और उसको गरम होने दें. अब उसपर ब्रेड के तयार किये गए पोक्केट्स डाल कर उसको सेक लें.
हो गयी हमारी ब्रेड सेवोरीस तयार. इसको गरम गरम परोसें चटनी के साथ.

आलू की कचोरिया - Alu Kachori

सामग्री:
आलू का भरता बनाने की सामग्री :


१) आलू : आधा किलो, उबाल कर कांटे की मदद से भरता बनाले.
२) लाल मिर्च पौडर : आधा खाने का चम्मच.
३) काली मिर्च : कुटी हुई, एक चाई का चम्मच.
४) सफ़ेद जीरा , भुना,पिसा हुआ : एक चाई का चम्मच.
५) हरी मिर्च : चार अदद , बारीक कटी हुई.
६) हरा धनिया : एक गुटी, बारीक कटा हुआ.
७) पुदीना : आधी गुटी, बारीक कटा हुआ.
८) लीमू : चार अदद.
९) नमक : स्वाद अनुसार.
१०) प्याज एक डल्ली बड़ी : बारीक कटी हुई.
११) आटा : आधा किलो.
१२) मीठा सोडा : आधा चाई का चम्मच.
१३) गुड़ : एक छोटा टुकडा लेकर तीन खाने के चम्मच पानी में डालकर शीरा बनाले.
१४) अजवाइन : एक चौथाई चाई का चम्मच.
१५) नमक : स्वाद अनुसार.
१६) तेल : ज़रुरत के अनुसार.



विधि:



आटे में गुड़ का शीरा, अजवाइन , सोडा और नमक मिलाकर नर्म गूंध्ले. और पानी मिलाकर आटे को थोडा और नर्म करलें. जितना नर्म होगा कचोरी उतनी ही स्वादिष्ट बनेगी.
आलू के भरते में सारे मसाले और लीमू का रस मिलादें. चूल्हे पर कढाई में तेज़ आंच पर तेल गर्म करें , जितनी देर में तेल गर्म होगा, आप एक पूरी के पेढे के बराबर आटा लेकर पानी से हाथ गीला करके पेढे को हाथ पर फैला लें, फिर उसमे मसाला मिले हुए थोड़े से आलू रखकर दोबारा हाथ गीला करके चारो तरफ से उठा कर बंद करदें. गीले हाथ से ज़रा सा दबाकर दोबारा फैला लें, फिर तलना शुरू करें, आंच हलकी करदें. जब अच्छी तरह से ताल जाए तो निकाल कर छलनी में टिशु पेपर बिछाकर रखदें, ताकि तेल अच्छी तरह से जज्ब होजायें. इमली की चटनी या हरी मिर्च की चटनी के साथ सर्व करें.

Dal Dhokli - दाल ढोकली

बनाने की विधि:

सामग्री:
दाल के लिए
१/२ कप टूर दाल
१/४ कप चना दाल
२ छोटे टमाटर
१ दालचीनी
३ लवंग
१ तेज पत्ता
१/२ चमच हल्दी पाउडर
१/२ चमच कसूरी मेथी
१/४ कप सुखा मूंगफली
चुटकी हिंग
नमक स्वादानुसार


ढोकली के लिए
१ कप आटा
१ चमच हल्दी पाउडर
१ चमच लाल मिर्च पाउडर
१ चमच धनिया-जीरा पाउडर
१/२ चमच अज्वैन
१ चमच तिल
नमक स्वादानुसार


एक प्रेशर कुकर में सभी दाल ,दालचीनी, लवंग, तेज पत्ता , हल्दी पाउडर , हिंग , मूंगफली , कसूरी मेथी और नमक डाल कर पकाए.
एक कडाई मैं तेल डाले और उसमे जीरा , सरसौ,सुखा लाल मिर्च डाले. अब उसमे कटे हुए टमाटर डाले. तब तक पकाए जब तक टमाटर गल जाये.
अब इसमें दाल, हरी मिर्च और २ कप पानी मिलाके उबाले.
जब तक दाल उबलती है, तब तक आप ढोकली बना लीजिये. ढोकली बनने के लिए आटे में नमक, हल्दी पाउडर, धनिया-जीरा पाउडर, तिल , अज्वैन, लाल मिर्च पाउडर डाले और पानी से कड़क आटा बनाइये.
अब यह आटे से बड़ी रोटी बनाइये और इसको अपने मनपसंद आकर में काट लीजिये. अब ढोकली तैयार है.
ढोकली को उबलती दाल में डाले , और दाल गाडा होने तक पकाइए.
दाल-ढोकली तैयार है.
इसे चपाती या चावल के साथ खा सकते है, या फिर इसका अकेले भी आप आनंद ले सकते है. खाने से पहले थोडा निम्बू का रस डाले और परोसे.
अगर आपको थोडा खट्टा-मीठा स्वाद पसंद है तो इमली और गुड भी डाल सकते है.

The concept of ergonomics is not only confined to the shop floor of an industry, it has also occupied its space in the office premises as Office Ergonomics. One part of Office Ergonomics is Visual Display Terminal (VDT) ergonomics. VDT comprises of computer and its workstation, which includes positioning of the computer, working posture at the computer as well as the workstation for computer, like computer table, chair, accessories and work environment etc (ISO, 1998). People whose occupations involve spending prolonged period of time at the computer workstation are subjected to stresses that may lead to painful, debilitating conditions (Saito, 1996; Swoboda, 1992). The resulting stress may cause higher levels of fatigue and tension during the day. Prolonged exposure to a non-ergonomic working environment may lead to the development of Cumulative Trauma disorders, or CTD’S (Saito, 1996; Laville, 1980). Cumulative Trauma disorders or CTD’S are a class of injuries that arise from putting excessive pressure on the body to perform over a period of time.

Various suggestions are given in the knol to avoid problems.

A new definition of industrial engineering emerged in the literature. “Industrial Engineering is Human Effort Engineering. It is an engineering discipline that deals with the design of human effort in all occupations: agricultural, manufacturing and service. The objectives of Industrial Engineering are optimization of productivity of work-systems and occupational comfort, health, safety and income of persons involved.” According to this definition the two focus areas of industrial engineering are human effort engineering and systems efficiency/productivity engineering.

Jimmy Wales: I don't think Knol is a competitor at all. Knol is nothing like Wikipedia and doesn't have the potential to become anything like Wikipedia.

The very design of the site is really more of a blogging platform. They say very explicitly that they want people to post their own opinions and have more of a quirky commentary style. They have no editorial structure the way that we do to push for quality.

5,000,000 (5 million) page views for a Knol Author in year

I am thinking I can plan for 1000 knols each having 5000 page views in the year. That will give 5,000,000 page views in year. 5 million, right. I think it is possible. 100,000 page views in a week.

Many other knollers will achieve similar targets and knol platform will move away from the worries of the survival of the platform in 2009-10.

I think knol admin should release knol page view and other statistics for the entire platform on daily basis or weekly basis. Some of the statistics can be:

1. ENTRY OPEN TO LEGAL RESIDENTS OF THE 50 UNITED STATES AND DISTRICT OF COLUMBIA ONLY, 13 YEARS OF AGE OR OLDER. Authors have to be Registered Users of knol.google.com (“Registered Users”). To become a Registered User of the Knol Site, you must register for an account and agree to the Site’s “Terms of Service” and “Knol Content Policy” set forth at knol.google.com.

2. 2. Contest Dates: The Contest begins January 23, 2009 at 12:00:01 AM Pacific Time (“PT”), and ends May 8, 2009 at 11:59:59 PM PT (“Contest Period”). During the Contest Period there is an entry submission event and a judging/clearing event.

3. Enter, create and submit into the contest website an essay (i.e. a “knol”) sharing your knowledge about a particular subject. Contest materials and instructions on how to enter your knol and participate in the Contest will be available on the Knol web site (knol.google.com). For the purpose of this Contest, an Entry is a submission created specifically for this Contest that is complete (as determined by Sponsors). Each Registered User may submit multiple entries during the Open Call for Submissions; however, only the highest ranked knol from each Registered User, as determined by Google in its sole discretion during the course of the initial ranking process, will be counted for purposes of final judging. Any editing of a knol must be complete by last day of submission period.

4. Language: English only.

5. Entries may only be submitted by a knol Owner. Group entries will not be accepted (although different individuals might have taken part in the development of a knol Entry, only one individual may be considered to have produced and submitted the Entry as the final Owner of the knol). Ownership of a knol entry will be determined as of the last day of the contest submission period (11:59:59 PM PT on March 23, 2009)

6. Selection of Top 50 Finalists: On or about March 24, 2009 through March 31, 2009, all eligible entries will be initially evaluated by Google using a ranking process that takes into account, but is not limited to, the following measurement criteria: quality of content, clarity of presentation, importance of subject matter, interest level, and overall impression. The Top 50 entries with the highest ranking, at Google’s discretion, will then be provided to a panel of Wiley representatives (“Panel”).

7. Judging to Determine Winners: The Panel will score each eligible Top 50 Finalist Entry based on the following judging criteria, each given equal weight:

Overall Impression


Based on the Panel’s scores and Sponsors’ discretion, up to five (5) Entries will be selected as “Potential Winners” one of which will be deemed, the Potential Grand Prize Winner; In the event of a tie, all tied entries will be re-judged by an additional judge selected by Wiley, who, using the judging criteria will break the tie. In the event that there are not enough eligible entries (in Sponsors’ discretion), Sponsors may choose to select less than five (5) Potential Winners. The judges' decisions are final and binding in all matters relating to this Contest.

8. Prizes: One (1) Grand Prize: A check for $1,000 and the opportunity to have winner’s article published on the “For Dummies” web site (www.dummies.com). Four (4) First Prizes: the opportunity to have First Prize Winners’ article published on the “For Dummies” web site (www.dummies.com). To be published on the “For Dummies” web site, winning entries will be edited as deemed appropriate by Wiley, and only those in line with the “For Dummies” brand and standards (at the discretion of Sponsors) will be published.
